The vines are 23 years old planted on clay, limestone and gravel soils. The vineyards are managed with total respect to the environment. De-stemmed grapes spend three days macerating with skin contact at 50°F, followed by fermentation at 77°F. An additional five days maceration follows before pressing. Only the first press is included in final wine. Half of the wine is aged in new oak barrels for four months and the other half remains in stainless steel vats. The wine is blended and then spends an additional two months in vat prior to bottling.TASTING NOTES
Bright medium ruby. Very elegant with aromas of fresh strawberry, cherry, and sweet spices with a hint of vanilla. Medium-bodied with ripe, silky tannins and firm acidity and a long finish. Drink with flavorful appetizers, hors d’oeuvres, white meat entrees, salmon, and cheese platters.
