Jean-Claude Mas, independent winemaker, fourth generation grape grower, first generation winemaker and owner of Domaines Paul Mas, is a leader in fine winemaking in the Languedoc region of the South of France. Since taking the helm of the family winery in 2000, he has prioritized sourcing the highest quality grapes from twelve privately owned estates and premier growers in the Languedoc to make wines of authenticity and refinement. The Belluguette vineyard is predominantly limestone with gravel. The average yield of this cuvee is 35hl/ha. Destemming, skin contact and cold settling at 46°F. Each grape variety is vinified separately – the fermentation takes place in oak barrels for one month in between 60°F–64°C. 50% of the blend goes through malolactic fermentation. The final wine is then aged in oak barrels for four months (2/3 in French barrels and 1/3 in American oak).TASTING NOTES
Deep lemon with a pale rim color. Nose is intense and complex with aromas of tropical fruits (ripe mango, melon, pineapple) combined with yeasty notes (brioche, toast) and oak (vanilla). The palate reveals a rich and creamy texture; a powerful wine with depth, complexity and a lingering finish. Keep for five to eight years. Drink at 50 – 54°F. Pairs well with white meats, salad, fishes – also a great as an aperitif.
