Jean-Claude Mas, independent winemaker, fourth generation grape grower, first generation winemaker and owner of Domaines Paul Mas, is a leader in fine winemaking in the Languedoc region of the South of France. Since taking the helm of the family winery in 2000, he has prioritized sourcing the highest quality grapes from twelve privately owned estates and premier growers in the Languedoc to make wines of authenticity and refinement. Vines grow on clay and limestone soils with gravel. Destemming. Malolactic fermentation occurs in barrels. The wine is then aged in oak barrel for six months. Skin contact maceration occurs for three days at 50°F in order to extract color and aromas. The fermentation takes place in temperature-controlled stainless-steel tanks with selected yeast at 77°F maximum and is followed by skin contact maceration for five days. Malolactic fermentation occurs in barrels. Aged in oak barrel for six months.TASTING NOTES
A medium ruby color with very elegant notes of red berries (strawberry, cherry, griottes) combined with soft spices aromas with a hint of vanilla. Medium-bodied wine with ripe tannins and a wellbalanced acidity. Red fruits aromas combined with spicy notes. Pairs well with red meat, white meat and lamb, veal or pork, game and soft/medium cheeses.
